I can suggest you two techniques that you can do by yourself. If
you send HTML newsletter, you can include a counter, the same like
you would put on your web site. When someone opens your email
newsletter your counter will record the time and day of reading.

Another thing that you can do (you can do this in text email
newsletters, as well) is to put only a part of the text in your email
newsletter and to tell your readers that if they want to read the
whole story to click on your link. You will put the complete article
on your web site. You will track that certain link and you will be
aware what is the most popular time and day for reading your newsletter.
